Easy peasy muffins

So quick and easy you can make them all the time! Try different fruits and nuts, or even dessicated coconut. I like them with less sugar myself, so make them to taste. They use ingredients you can buy almost anywhere and very cheaply too. Perfect for bake sales, kids, parties, free food fairs, etc.

Ingredients

  • 2 cups flour
  • 1 tsp baking powder with SR flour, 2 tsp with plain flour
  • 0.5 cups sugar
  • 0.75 cups veg oil (preferably rapeseed or olive oil)
  • 0.75 cups soya milk
  • 2 tsp vanilla essence
  • 1-2 tsp mixed spice (optional, and great with apple and raisins)
  • 2 handfuls of chopped fruit (strawberries or apples & raisins work well)

Method

  • heat oven to 180C, gas mark 5
  • put muffin cases in muffin tins (silicon tins make it really easy, and muffin cases are optional with these, though handy)
  • mix dry ingredients
  • fold in wet ingredients
  • mix in fruit
  • spoon into muffin cases and bake for 13 minutes in a fan-assisted oven until lightly golden
  • cool on a wire rack and serve warm or cold as they are, or with soya cream or dairy-free ice cream
